Kim- All of the amazing ladies that are apart of this group. They remind me that I am not alone and we are always here to support one another on good days and bad.

Rachel- The accountability!!! I love checking in everyday and seeing everyone else check in. It keeps me motivated to eat healthy and exercise so I have something to report!

Megan-  I read everyone's check ins and get inspired. On good days I am mobile and can do yoga or go on a walk. But I always work on my nutrition and water. This group reminds me I am not alone. We just decided to get me a wheelchair for when I am out of the house because I keep getting injured in public. That means I will need to exercise at home even more to keep my body healthy.

Tamara- The most rewarding parts of being a coach are learning to break through the walls of self-doubt through personal development, the confidence I have gained, the new people I have connected with & the ones whom I have reconnected with. And most definitely the AMAZING women in this team!!! Carrie-Lynne-The most rewarding part of coaching is the personal growth I've gain and the amazing people that have come into my life because of it 😘

It's funny people are so quick to judge a book by its cover. Left: me approximately 2 and a half years ago. My body has definitely gone through a lot of phases from being almost anorexic (pics soon to come) to having a binge eating disorder. My eating habits and health slowly got better after I got into a gym and was introduced to weights my sophomore/junior year at UCF. Of course, I was not consistent until recently, but I gained a lot of mental health benefits from working out and also found a healthy way to relieve a lot of the stress I was under as a premedical student 😷. Me on the right: currently in a very happy place both mentally and physically. I am still learning, I am still growing, but I am proud of how far I have come. For the girls who sit there and message me and tell me if this is what I want to be on social media perhaps you shouldn't be so quick to judge. Perhaps you should also be inspiring and lifting up women instead of demoralizing them. My goal is to be inspirational and to use my insta as a personal blog for myself. For everyone else, if I can do it then I know anyone can. All it requires is a bit of motivation and a desire to be better.

Spinach & Soy Crumble + Adobo

I love making fat free sauces and salsas to make my prep more interesting. If I'm eating pretty much the same thing 7 days a week, you better believe I'm going  to have many different flavor profiles.

Yesterday was lemon pepper crumbles with broccoli & πŸ₯‘ 
Today - Crumbles with spinach & adobo sauce. 10x better πŸ‘‡πŸΎ sauce recipe... I use this sauce on veggies as well. 
Sauce HACK: Definitely make a big batch! You can let it cool and freeze your sauce in ice trays. Place the tray in a zip lock bag and VÍOLA! Pop out a cube or two and add it to dishes while they are cooking to add extra flavor without adding calories. Will try to post more of my sauce recipes that I do this with... 4 Ancho 🌢 
3 Guajillo 🌢 
6 🌢 DE Árbol *use less if you can't take πŸ”₯ 
6 Garlic cloves
1 tsp of cinnamon 
1 tsp of Mexican oregano
1/2 tsp of cumin
1/4 tsp ground cloves
1/4 cup of 🍎 cider vinegar 
2 cups of πŸ’¦ *salt to taste - Remove stems and seeds from 🌢 🌢🌢 toast (both sides) in skillet until peppers are blistered and slightly darkened but not black.
- Place 🌢 🌢🌢 in boiling πŸ’¦ for 10 minutes. Remove from heat and let cool. - Combine all spices.
- Roast garlic with skin on until golden brown, let cool.
- Place 🌢 🌢🌢 in blender + spices + roasted garlic + vinegar, πŸ’¦ and salt to taste. Blend on high until smooth. Strain through a wire-mesh strainer.
- *Store in an airtight container or freeze for later using sauce HACK above πŸ‘†πŸΎ Like spaghetti... this sauce only gets better with rest. So I suggest letting all those flavors mary and get cozy together! Use it in a couple days πŸ˜‹
