Happy Sunday, flowers! โค๏ธ In the spirit of RAWgust, allow me to introduce you to my latest creation: Raw Vegan Zughetti (alla) Carbonara.

*This recipe makes 2-4 servings*
Ingredients:
โ€ข 6 zucchinis, use a spiralizer to cut them into "zoodles".) โ€ข 1 cup cashew nuts, raw and soaked until softened. โ€ข 1 cup plant milk, I used oat milk.
โ€ข 1 tsp black salt* special thanks to @next_wednesday and @hummusandthehousered for introducing me to black salt. โค๏ธ
โ€ข 1 tsp Dijon mustard
โ€ข 1 tsp freshly ground black pepper
โ€ข 1/2 garlic powder โ€ข 1/4 tsp nutritional yeast
โ€ข sun-dried tomatoes, cut into small pieces
โ€ข fresh parsley, chopped ๐ŸŒฑ
Instructions:
1. Use a spiralizer to make your zucchini spaghetti.
2. In a food processor, add cashew nuts, plant milk, black salt, garlic powder, Dijon mustard, black pepper, and nutritional yeast. Then, blend until smooth.
3. Sprinkle sun-dried tomatoes on top of the zughetti. And toss everything together.
4. Pour the sauce over the zughetti and mix well, quickly and gently.

I was inspired by my wonderful follower @horrorbabe_13 who would like me to create a breakfast recipe that is also suitable for kids so she could recreate it for her children. ๐Ÿ‘ง๐Ÿ‘ง
After a bit of research, I decided to ask the kid in me what would look and taste so good it'd trick me into eating well without realizing... and that's how this recipe came about! This chocolate spread turned out so well that even non vegans can't get enough of it!

Vegan "NOtella" Chocolate Spread ๐ŸŒฑ
Ingredients:
โ€ข 1 can chickpeas*
(Rinse and boil in 4 cups water and 2 tbs vanilla extract, to get rid of the chickpea smell, for about 10 minutes)
โ€ข 1 avocado, ripe
โ€ข 2 tbs coconut sugar
โ€ข 1/8 tsp Himalayan salt
โ€ข 4 tbs vegan butter, melted โ€ข 1/4 cup cocoa powder
โ€ข 1/4 cup maple syrup
๐Ÿฅ‘
Instructions:
1. In a food processor, add boiled chickpeas and blend until smooth.
2. Add avocado, coconut sugar, salt, cocoa powder* (don't use raw cocoa for this recipe, I found that roasted cocoa powder enhances the overall flavours), melted vegan butter, and maple syrup, and continue to blend until well combined.
3. Check the overall consistency, make sure there is no lumps or anything unpleasant in your chocolate spread. Have a taste and make sure the mixture is smooth. Once you're satisfied with the result- transfer the mixture to a jar.
4. The spread should set without being refrigerated, as shown in the video, if it's too thick, add a splash of plant milk to thin out the mixture.
5. Indulge in your homemade chocolate spread: off a spoon, fingers, strawberries, or enjoy it on any kind of bread, toasts, or even cakes. Get creative.

๐Ÿ‡น๐Ÿ‡ญ Before you assume Thai cuisine is all about curries, deep fried - stir fried dishes, let me introduce you to Spicy Papaya Salad, also known as Som Tum. (In Northeastern dialectic, Som means sourness/ acidity and Tum means dishes that involve crushing ingredients in a mortar as a cooking method.) This Laotian-inspired fiery appetizer/ entrรฉe has made one of the top dishes when the subject of Thai cuisine is raised. ๐Ÿ‡น๐Ÿ‡ญ
Ingredients:
โ€ข 10 g chilies โ€ข 40 g long yard beans/ green beans, cut into 1 inch pieces โ€ข 10 g garlic
โ€ข 60 g shredded carrot
โ€ข 60 g shredded green papaya โ€ข 40 g cherry tomatoes
โ€ข 15 g roasted peanuts
โ€ข 1/4 tsp Himalayan salt
โ€ข 2 tbs lime juice
โ€ข 1 tbs light soy sauce โ€ข 1 tbs coconut sugar ๐Ÿฅ— 
Instructions:
1. Begin by crushing garlic and chilies in a mortar, using a pestle, followed by yard long beans and tomatoes.
2. Add salt, light soy sauce, coconut sugar, and lime juice, using a pestle to mix everything together. Make sure the sugar is fully dissolved before adding pan roasted peanuts. 
3. Now, at this step, most Thais would tell you to add shredded green papaya and shredded carrot in a mortar so you can continue "crushing" the ingredients, in other words- mixing everything together. However, I personally I think it'd look unappetizing. So, instead, I put the shredded vegetables in a large bowl, pour the dressing on top and toss everything together, in the same manner as making a salad. 
4. Serve with fresh vegetables or steamed sticky rice, if you'd like some carbs to go with that deliciousness.

Happy weekend, my stars! I hope everyone have had a productive week! It's been brilliant here in my humble kitchen. I finally created my very own vegan pulled pork burgers, using mushrooms! The reason for that is not just because of my love for mushrooms in general, but also because canned green jackfruit is not available in Thailand. And fresh green jackfruits are just as hard to come across in Bangkok. So, I came up with a substitute, and I was very pleased with the result. I hope you will be, too. These burgers are perfect for your next vegan cookout/ BBQ! It is so flavourful and so easy to make. Not to mention, you don't need a lot of time nor a slow cooker for this recipe at all. You'd need less than 30 minutes and a few household ingredients and you're set! ๐Ÿ‘Œ
๐Ÿ” 
Vegan Pulled Mushroom Burgers ๐Ÿ’š
โ€ข 450 g oyster mushrooms, shredded โ€ข 1 tsp cumin
โ€ข 2 tsp smoked paprika
โ€ข 1/2 tsp garlic powder
โ€ข 1 tsp onion powder
โ€ข 1 tbs avocado oil โ€ข 1 tsp Dijon mustard
โ€ข 1 tsp tamari
โ€ข 1 tbs liquid smoke
โ€ข 1/2 cup your favourite vegan barbecue sauce
โ€ข toasted wholewheat burger buns (2 servings)
๐ŸŒฑ
Instructions:
1. Sautรฉ shredded mushrooms in oil on medium heat for 7-10 minutes or until all the liquid has evaporated.
2. Add cumin, smoked paprika, garlic powder, and onion powder- continue to sautรฉ until the spices are nicely toasted and fragrant.
3. Add Dijon mustard, tamari, and liquid smoke. Continue to cook until everything is nicely seared. 
4. Stir in barbecue sauce of your choice and have a little taste, add a bit more mustard or salt, if needed. 
5. Serve pulled mushrooms in burger buns (lined with romaine lettuce) and garnish with red cabbage for visual effects and extra texture.

Hi friends! It's ThrowBack time! Let's go back to one of my favourite Thai dishes: Vegan Tom Kha or as some of you already know- Thai Style Coconut Soup
๐Ÿ’š
If you're fan of Thai food, you probably are familiar with the term "Tom Kha Gai": Tom kha literally means โ€œ(to)boil galangal or boiled galangalโ€ in Thai, which is not that far from the truth. And "Gai" basically means chicken, which we will exclude from the recipe entirely for apparent reasons. ๐ŸŒฑ
Tom Kha is a coconut milk-based soup infused with Thai herbs such as lemongrass, kaffir lime leaves, and, of course, galangal. The taste is intended to be creamy yet mild and light. 
You would not believe how easy it is to cook this bowl of soup at home. 
You will need:
โ€ข 2 cups coconut milk โ€ข 1 cup water โ€ข 20 g shallots, crushed
โ€ข 30 g lemongrass, crushed โ€ข 50 g  galangal, thinly sliced
โ€ข 5 g kaffir lime leaves
โ€ข 200 g banana blossom, chopped โ€ข 2 tsp Himalayan salt
โ€ข 100 g oyster mushrooms โ€ข 200 g cabbage โ€ข 2 tbs light soy sauce
โ€ข 2 tbs freshly squeezed lime juice โ€ข 10 g fresh chili โ€ข 10 g coriander for garnish 
Instructions:
1. Heat coconut milk in a pot, followed by adding shallots, lemongrass, galangal, and kaffir lime leaves. 
2. Stir and bring to a boil. 
3. Add banana blossom along with salt, bring to a boil, and simmer until softened (for about 5 minutes). 4. Add cabbage and and fold everything together before adding water, mushrooms and chilies. Bring to a boil leave to simmer.
5. Add light soy sauce, stir, and taste. 
6. Remove from heat and leave the soup to cool down for about 5 minutes 
7. Once the soup becomes warm- add freshly squeezed lime juice and season to taste with more salt if needed; then, stir.
8. Serve warm as is or with a bowl of steamed rice or vermicelli
9. Indulge.

Hoisin Lemon Sauce:
โ€ข 1 1/2 -2 tbs Hoisin Sauce* (Depends on how strong your hoisin sauce tastes)
โ€ข 1/2 tbs rice vinegar
โ€ข 1/2 tbs soy sauce
โ€ข 1 tbs lemon juice
โ€ข 1 tsp sesame oil
โ€ข 1 - 2 tbs water ๐Ÿœ
Instructions:
1. Begin by cooking ramen noodles al dente. Remove from pot/ pan.
2. Add a drop of sesame oil to the remaining (boiling) water before blanching bok choy. Soak the cooked bok choy in a bowl of iced water for 3 minutes before shaking off the excess water, rest on kitchen towel. 
3. In a nonstick pan/ wok, add 1 tbs coconut oil, place tofu pieces in a pan, season with sea salt and pepper, gradually add a teaspoon of coconut oil if needed. Remove tofu from pan when properly seared. 
4. Add 1 tablespoon of coconut oil to a wok, sautรฉ ginger, garlic, and mushrooms together for half a minute before adding the hoisin lemon sauce. Simmer quickly before adding scallions, followed by cooked ramen.
5. Stir fry until the noodles are fully coated. Turn off the heat and let the noodles absorb the sauce for a minute before serving alongside bok choy and fried tofu. Lastly, sprinkle some white sesame seeds on top.

Why don't you save yourselves a fortune on takeaway/ takeout, and try my (vegan) Hoisin Lemon Stir Fried Ramen instead? ๐Ÿœ๐Ÿ‹ ๐Ÿ’š

Ingredients:
โ€ข 60 g dry Instant Ramen or vegan soba noodles
โ€ข 30 g scallions/ green onions
โ€ข 160 g Bok Choy
โ€ข 70 g King Oyster Mushrooms
โ€ข 1 tbs chopped garlic
โ€ข 1 tbs chopped ginger
โ€ข 100 g tofu โ€ข cooking coconut oil โ€ข sea salt and pepper for seasoning

Happy weekend, friends! How is everyone enjoying the weekend? I'm having quite a relaxing time. Today I'm serving up lots of spices and flavours with one of my all time favourites: Tandoori Tofu ๐Ÿ”ฅ 
These savoury skewers are perfect for parties and picnics. So incredibly easy to make, yet guaranteed to be a hit with vegans and non vegans.

Tandoori Tofu
๐ŸŒฑ
โ€ข 250 g firm tofu, plain or brined in salted fresh water
โ€ข 1/2 cup coconut cream
โ€ข 1 tsp turmeric
โ€ข 1 tsp curry powder
โ€ข 1 tsp garam masala
โ€ข 1 tsp smoked paprika
โ€ข 1 tsp cumin
โ€ข 1/2 tsp salt
โ€ข 1 tsp black pepper
โ€ข 1 tsp garlic, minced
โ€ข 1 tsp ginger, minced
โ€ข 2 tbs lime juice
โ€ข fresh coriander, red onion, and a slice of lime for garnish ๐Ÿ’š
Instructions:
1. Cut tofu into bite-sized cubes and brine in salted fresh water to give tofu a little flavour, if preferred. You can use tofu straight out of the packet also. 
2. Add all the ingredients except for garnish in a bowl, mix well before adding tofu to marinate for at least a few hours. 
3. Soak bamboo skewers in water to prevent them from burning once they go into the oven or a grill. 
4. Once your tofu is ready, transfer them to skewers, spray some avocado oil on top, and grill or bake at 375 for 15-20 minutes or just until the outside looks and appetizing. You can pan fry these in a pan also, if you'd like. 
5. Serve with a slice of lime, red onion, and garnish with fresh coriander.

You know me, veganizing things is my gig; so, of course, I make my own substitute for peanut butter cups: almond butter cups which are just as good if not better and 100% cruelty free! ๐Ÿ˜
These munchies may be sweet, but they sure aren't as sweet as you all. ๐Ÿ˜˜
Vegan Almond Butter Cups ๐Ÿ’›
โ€ข 500 g dark chocolate (make sure it's vegan)
โ€ข 1/2 cup unsweetened almond butter, smooth
โ€ข 2 tbs maple syrup โ€ข 12-16 paper muffin cups, regular or miniature 
Instructions:
1. Melt your dark chocolate using double boiler. I do not recommend using microwave because I do not want the chocolate to firm up quickly. We want this to be runny and nice. A little tip- if you're using the 75% or 90% dark chocolate and would like the finished products to have that fudgy feel the original version does- add 1/2 cup of peanut butter into your melted chocolate and mix well before moving on to the next step. I didn't, however, because this is how I prefer mine. 
2. Place your paper muffin cups in muffin tins and pour in 1-1.5 tsp of chocolate into the cups: just aim for 1/6 of regular sized muffin cups or 1/4 of miniatures. Finish off with the old tappa-tappa to get rid of bubbles and for the surface to be all nice and smooth. Put in the freezer for 10-15 minutes. 
3. Melt almond butter with maple syrup in the microwave for 15 seconds or until almond butter melts, making it easier to mix both ingredients together.  4. Drop another 1-1.5 tsp or almond butter mixture on top of the base of chocolate and pour over the final layer of chocolate. Let cool completely or refrigerate until solidified.

Speaking of love- this recipe was inspired by the love a man has for his girlfriend: @the_pretentious_username wrote to me a while ago, asking if I could create a recipe for vegan chili chicken that tastes so delicious that it takes his non vegan girlfriend's breath away. Being a softie, I could never say no to his request! ๐Ÿ’Œ
As a result, I spent my entire week perfecting this recipe. I finally came up with one that is going to make anyone who tries it fall in love! (with vegan food and maybe with the one who cooks it, too! ๐Ÿ˜‰) ๐ŸŒถ 
Vegan Chili Chicken ๐ŸŒฑ
โ€ข 40 g textured soy protein slices, soaked and cut into bite size.
โ€ข 180 ml almond milk, refrigerated
โ€ข 1/4 cup corn flour
โ€ข 1/2 cup plain flour
โ€ข 1/4 tsp salt
โ€ข coconut oil enough for deep frying. โ€ข 1 tbs grapeseed oil โ€ข 50 g leek
โ€ข 1 tbs ginger and garlic (each)
โ€ข  300 g capsicum, yellow and green (150 g each)
โ€ข 100 g red onion
โ€ข 1/2 tsp salt
โ€ข 1/2 cup unsalted vegetable broth
โ€ข 2 tsp arrowroot flour
โ€ข 1 tbs light soy sauce
โ€ข 2 tbs sriracha sauce
โ€ข 1 tbs coconut sugar โ€ข 1 tsp black pepper 
Instructions:
1. Mix flours, salt, and almond milk before adding textured soy protein, make sure everything is fully coated. Fry in hot oil until crispy and golden brown. 
2. Sautรฉ leek, followed by garlic and ginger until fragrant. Then, add capsicum and red onion, sautรฉ until nicely toasted. 
3. Add arrowroot flour, followed by unsalted veggie broth- stir until thickens.
4. Season with light soy sauce, sriracha sauce, and coconut sugar. Once you're happy with the flavours- add black pepper, followed by vegan fried "chicken".
5. Fold everything together, garnish with chili and chopped scallion.
6. Indulge.

That's right, lovelies- it's ThrowBack time! Let's look back at my 3-ingredient-scrambled tofu video ๐Ÿ’•

This is for every and any vegan who are new to the community. If you just became vegan- fear not! I've got you covered with my go to recipe- not just because it's incredibly simple, but it is, oh, so delicious! And this version of scrambled tofu tastes really close to actual eggs!
๐Ÿณ 
I also would like to thank one of my awesome followers @next_wednesday ๐Ÿ˜€๐Ÿ™ who introduced me to black salt because it completely changed my life. You could use black salt in other dishes that contain eggs as well- like potato salad or fried rice. 
Here are what you need to make this version of Tofu Scramble:
โ€ข 200 g firm tofu, 
mashed or crumbed โ€ข 1-1.5 tsp turmeric powder
โ€ข 1/2 tsp black salt (and another 1/2 tsp for when you stir fry tofu)
๐Ÿณ 
And that's it for the scrambled tofu. However, if you were to serve it properly, you might also need:
โ€ข 1 avocado ๐Ÿฅ‘, mashed
โ€ข 100 g asparagus
โ€ข cherry tomatoes
โ€ข 1 tbs vegan butter (to sautรฉ asparagus)
โ€ข whole wheat flour tortilla and/or toasts
๐Ÿฅ‘ 
Instructions:
1. Sautรฉ asparagus in vegan butter. Remove from pan when cooked.
2. Mix all 3 ingredients for tofu scramble in a large bowl and transfer to the same pan that cooked asparagus. There should be some vegan butter left- enough to sautรฉ tofu. 
3. Stir fry tofu for about 10-15 seconds before adding another 1/2 tsp of black salt* (before adding more, have a little taste to make sure it needs more seasoning). Continue to stir fry until you reach the texture you desire. Remove from heat. 
4. Serve hot, whichever way you prefer. 
Tips: Add chives, nutritional yeast, or sriracha sauce to scrambled tofu for extra flavours. ๐Ÿ˜„๐Ÿฅ‘๐Ÿ’•

This is for every and any vegan who are new to the community. If you just became vegan- fear not! I've got you covered with my go to recipe- not just because it's incredibly simple, but it is, oh, so delicious! And this version of scrambled tofu tastes really close to actual eggs!

I also would like to thank one of my awesome followers @next_wednesday ๐Ÿ˜€๐Ÿ™ who introduced me to black salt because it completely changed my life. You could use black salt in other dishes that contain eggs as well- like potato salad or fried rice.
Here are what you need to make this version of Tofu Scramble:
โ€ข 200 g firm tofu,
mashed or crumbed โ€ข 1-1.5 tsp turmeric powder
โ€ข 1/2 tsp black salt (and another 1/2 tsp for when you stir fry tofu)

And that's it for the scrambled tofu. However, if you were to serve it properly, you might also need:
โ€ข 1 avocado ๐Ÿฅ‘, mashed
โ€ข 100 g asparagus
โ€ข cherry tomatoes
โ€ข 1 tbs vegan butter (to sautรฉ asparagus)
โ€ข whole wheat flour tortilla and/or toasts
๐Ÿฅ‘
Instructions:
1. Sautรฉ asparagus in vegan butter. Remove from pan when cooked.
2. Mix all 3 ingredients for tofu scramble in a large bowl and transfer to the same pan that cooked asparagus. There should be some vegan butter left- enough to sautรฉ tofu.
3. Stir fry tofu for about 10-15 seconds before adding another 1/2 tsp of black salt* (before adding more, have a little taste to make sure it needs more seasoning). Continue to stir fry until you reach the texture you desire. Remove from heat.
4. Serve hot, whichever way you prefer.
Tips: Add chives, nutritional yeast, or sriracha sauce to scrambled tofu for extra flavours. ๐Ÿ˜„๐Ÿฅ‘๐Ÿ’•

Vegan Mozzarella Cheese 3 ways ๐Ÿ’š
I made 3 vegan dishes from this recipe: 
1. Grilled Cheese Sandwich
2. Pizza
3. "Mozzarella" sticks
๐Ÿง€ ๐ŸŒฑ 
You'll need:
โ€ข 1/4-1/2 cup cashew nuts, soaked until softened (depends on how creamy you want your "cheese" to be)
โ€ข 1 cup unsweetened soy milk
โ€ข 2 tbs tapioca starch
โ€ข 1 tsp Himalayan salt
โ€ข 1/8 tsp garlic powder โ€ข 2 tbs tahini
โ€ข 3 tbs nutritional yeast
๐Ÿ‘ฉโ€๐Ÿณ
Instructions:
1. Blend all the ingredients together for about 20-30 seconds or just until the mixture no longer has lumps. This is for grilled cheese sandwich and pizza topping. If you're making mozzarella sticks, you'll need to blend it for about a minute or two. 
2. Put a nonstick pan on medium low heat, pour in the mixture. Stir vigorously.

For grilled cheese and pizza topping:
1. Stir until there are no lumps but don't overcook it. Make sure the mixture is viscous but not too thick. If the mixture comes out too thick, add a splash of soy milk to help thin it out. 
2. Spread onto bread and cook the sandwich the same manner you would a grilled cheese sandwich.
3. Spread the mixture onto a cooked vegan pizza and broil for a few minutes. ๐Ÿ‘Œ 
For Mozzarella sticks:
1. Continue to stir until the mixture begins to pull from the side of the pan (as shown in the video) and form a ball. 
2. Transfer your "cheese" to a container, preferably shaped like the ones in the video. Pop in the fridge or a freezer for an hour- until holds shape. 
3. Cut into strips before dunking them in plain flour- soy milk- plain flour- soy milk- and breadcrumbs.
4. Deep fry in coconut oil until golden brown. ๐Ÿง€๐ŸŒฑ

Happy Sunday, friends ๐Ÿ™‚ yesterday I shared my veggie Chow Mein recipe, and got a lot of positive feedbacks (which I am beyond thankful for). So, now, I'm thinking perhaps this is the perfect time to continue on with the Chinese theme, vegan style. What else did you order from your local Chinese takeaway/ takeout besides sweet and sour, chow mein, and fried rice? For me, it was the Peking duck, also known as crispy duck pancakes. Feeling nostalgic, are we? ๐Ÿ˜Š
๐Ÿ‡จ๐Ÿ‡ณ Vegan Peking/ Crispy "Duck" Pancakes ๐ŸŒฑ
โ€ข 50 g textured soy protein- shaped as shown in video
โ€ข 1-1/2 tbs Chinese five-spice powder*
(Depends on the intensity)
โ€ข 2 tbs coconut oil
โ€ข 1 tbs soy sauce
โ€ข 12 flour tortillas, fajita size* (I try to use simple things anyone can find, you can use traditional Chinese pancakes if you have them)
โ€ข cucumber sticks, peeled
โ€ข spring onions/ scallions
โ€ข white sesame seeds (optional)
๐Ÿ‘‡
Instructions:
1. Soak textures soy protein in water for at least 4 hours or overnight. 
2. Squeeze off excess water before cutting textured soy protein into strips and toss in a bowl with spices, soy sauce, and coconut oil. 
3. Bake the soon to be "duck" at 375 for about 30-40 minutes, flip half way. (This depends on how crispy you want your vegan duck to be).
4. Once the duck is ready, steam your tortillas/ pancakes for about 5-7 minutes. 
5. Assemble as shown in the video.

Homemade sauce:
๐Ÿฅ„
โ€ข 1/2 cup water
โ€ข 3-4 tbs hoisin sauce
โ€ข 1 tbs light soy sauce
โ€ข 1 tsp Dijon mustard
โ€ข 1 tbs corn flour โ€ข 1 tsp sesame oil
- whisk everything together until well combined before bringing the mixture to a boil (on low heat), stir vigorously until the sauce clears up and thickens. ๐Ÿ™

Hello friends, how is everyone doing? These past two days have been intensely heavy-hearted for me and for a lot of people from all over the world who are still mourning a tragic loss of a great man. I have too much that I want to say, and yet so little that I can actually do. One thing I know is that food tends to bring people comfort, and that's what I have to offer you today: a little comfort food. One of the most requested recipes: Veggie Chow Mein. Hope you all enjoy.

Veggie (Vegan) Chow Mein ๐Ÿœ
โ€ข 70 g leek
โ€ข 60 g red onion
โ€ข 50 g mange tout
โ€ข 100 g carrot
โ€ข 100 g capsicum
โ€ข 80 g shiitake mushrooms
โ€ข 1 tbs canola oil
โ€ข 1 tbs chopped garlic
โ€ข 1 tsp salt
โ€ข 1 tbs Chinese rice wine (Chaoxing) or white wine if you don't have that- just make sure it's vegan โ€ข 2 tbs light soy sauce
โ€ข 1 tsp rice wine vinegar
โ€ข 1 tsp white pepper
โ€ข two servings of vegan noodles (of your choice) blanched (al dente) and tossed in 2 tsp of toasted sesame oil
๐Ÿ’š
Instructions:
1. Sautรฉ garlic in canola oil until fragrant before adding leek and red onion. Continue to cook until the vegetables become translucent.
2. Add the rest of the vegetables and sautรฉ until they're nicely toasted, season with salt and chaoxing wine. 
3. Once the alcohol has evaporated, add cooked noodles, followed by light soy sauce and vinegar. Toss everything together. 
4. When the noodles are evenly seared and looking appetizing, have a final taste (see if you need more salt) if you're contented with the flavours- go ahead and add white pepper before quickly toss everything together again. At this point, you can add scallions (only the green part) for colours and flavours, if you'd like, before turning off the heat. Serve hot.

โ€ข 80 g (each) of red capsicum, red onion, baby carrot, and peeped beetroot
โ€ข 1/4 cup chickpea flour
โ€ข 1 cup vital wheat gluten flour
โ€ข 1 cup water
โ€ข 2 tbs tahini
Seasonings: โ€ข 2 tsp salt โ€ข 3 tsp smoked paprika
โ€ข 1 tsp sage
โ€ข 1 tsp black pepper
โ€ข 1/4 cup hot sauce (I use sriracha)

And the rest is pretty simple:
โ€ข (shop-bought) vegan pizza dough or make your own if you have the time

Instructions:
1. Roast all vegetables in the oven at 200 for an hour or until they're softened. 
2. In a large bowl/ jar mix together water , tahini, and all the seasonings before adding roasted vegetables and blend or purรฉe until smooth.
3. Add chickpea flour to the purรฉe, mix well before adding vital wheat gluten flour.
4. Continue to mix until everything is well combined. Rest the dough  for 10 minutes. 
5. Divide your soon to be fakeroni into two portions and form each one in the shape of a pepperoni using tin foil. Seal both ends, make sure they're tight and snug. Then bake your seitan-to-be at 375 for an hour. 
6. Unwrap your fakeroni and allow to cool completely before refrigerate for a couple hours before slicing them up. 
7. Roll out your pizza dough, evenly distribute pizza sauce on the dough before baking at 375 for about 7-10 minutes or until it looks half cooked as shown in the video. 
8. Take your half cooked pizza from the oven and add vegan mozzarella, followed by your fakeroni. Continue to bake until golden brown. 
9. Indulge. ๐Ÿ• ๐ŸŒฑ .

โ€ข 80 g (each) of red capsicum, red onion, baby carrot, and peeped beetroot
โ€ข 1/4 cup chickpea flour
โ€ข 1 cup vital wheat gluten flour
โ€ข 1 cup water
โ€ข 2 tbs tahini
Seasonings: โ€ข 2 tsp salt โ€ข 3 tsp smoked paprika
โ€ข 1 tsp sage
โ€ข 1 tsp black pepper
โ€ข 1/4 cup hot sauce (I use sriracha)
โ€ข 1/2 tbs liquid smoke
And the rest is pretty simple:
โ€ข (shop-bought) vegan pizza dough or make your own if you have the time
โ€ข tomato sauce or pizza sauce

Tofu Katsu Curry

There are so many ways to make Japanese curry or "Karฤ“" as they call it. But this is my take on the dish, as it was inspired by Wagamama's curry sauce from my non vegan days. 
It's simple and easy to make. The curry sauce is so flavourful, you could serve it with rice, noodles, chips (fries), or even bread. ๐Ÿ˜‹
This recipe yields 4 servings (or two large servings- whatever floats your boat. ๐Ÿ™ƒ)
๐Ÿ’š
Curry
โ€ข 2 tbs coconut oil โ€ข 3 cloves of garlic, minced/ grated
โ€ข 10 g ginger, minced/ grated โ€ข 4 tsp curry powder
โ€ข 3 tsp garam masala
โ€ข 2 tsp cayenne pepper (optional)
โ€ข 250 g onion
โ€ข 200 g carrot, peeled
โ€ข 150 g potato, peeled
โ€ข 250 g apple, peeled (I prefer green ๐Ÿ)
โ€ข 600 ml vegetable stock, unsalted
โ€ข 4 tbs soy sauce
โ€ข 1 tsp brown sugar 
Tofu Katsu
โ€ข a block of tofu
โ€ข 4 tbs tempura flour
โ€ข 6 tbs water* (the batter should be thick and not watery- add more flour if needed)
โ€ข 1/2 tsp Himalayan salt
โ€ข a bit of ground pepper
โ€ข 1/4 cup panko breadcrumbs 
Instructions
๐Ÿ‘ฉโ€๐Ÿณ
1. Sautรฉ garlic, ginger, and the spices with coconut on low heat until fragrant. 
2. Add the vegetables (cut into small pieces- this will help reduce the cooking time) and continue to stir fry for a few minutes before adding vegetable stock, followed by soy sauce and sugar. 
3. Simmer for 20-25 minutes or until all the vegetables are softened. 
4. Blend everything together and the sauce is ready for serving. 
5. As you're simmering the sauce, make your tofu katsu by coating tofu in tempura batter and panko breadcrumbs and deep fry until golden brown on both sides. 
5. Serve hot over a bed of rice or udon. ๐Ÿ‡ฏ๐Ÿ‡ต .

I have received tons of messages from my followers who have visited Thailand and had the best time. Unsurprisingly, one thing they all miss is Pad Thai! So, I thought I'd share this recipe again. ๐Ÿ˜‰
Almost everyone I have met have told me how much they adore this particular dish, and rightfully so! 
This savoury dish is bursting with punching flavours: salty and sweet with the right touch of acidity (as well as a little spicy kick!)

Vegan Pad Thai ๐Ÿ‡น๐Ÿ‡ญ
๐Ÿ’ฏ
(2 servings or 1 enormous serving)
๐Ÿด
Ingredients:
โ€ข 1 tbs coconut oil โ€ข 70 g firm tofu, crumbled
โ€ข 1/2 tsp turmeric powder
โ€ข 1/4 tsp black salt* (For eggy aroma)

(Sauce)
โ€ข 2 tbs tamarind paste
โ€ข 2 tbs water
โ€ข 2 tbs light soy sauce
โ€ข 2 tbs coconut sugar
โ€ข 1/2 tsp chili powder
โ€ข 1/2 tsp sea salt โ€ข 1 tsp rice wine vinegar

โ€ข200 g rice noodles, soaked until softened
โ€ข 50 g bean sprouts โ€ข 30 g green beans, thinly sliced โ€ข 40 g garlic chive
โ€ข 20 g scallion โ€ข 20 g shallot โ€ข 10 g garlic ๐Ÿฝ

Instructions:
1. Soak your rice noodles in lukewarm water for at least 2 hours or until softened
2. In a wok, sautรฉ tofu with turmeric powder and black salt with coconut oil for a minute or two. Remove from heat.
3. Add all the ingredients for sauce in a wok and stir until well combined. 
4. Add rice noodles, continue to sautรฉ for 5-6 minutes before adding vegetables.
5. Continue to cook for another 3-4 minutes before adding sautรฉed tofu, and fold everything together.
6. Serve with a side of lime and garnish with ground toasted peanuts and more chili powder. 
7. Serve hot and indulge. ๐Ÿ‘‡

Today I'm serving you this ultimate comfort food realness. Since a lot of you have been requesting more of my cheese-y recipes; I thought I'd share with you my endless love: VEGAN CHEESE FRIES! โค๏ธ And now, here I am with a new recipe video because that's what I do for the people I love ๐Ÿ˜˜(see how cheesy that was?! We are off to a good start ๐Ÿ˜‚) hope you enjoy! ๐Ÿ’š
Vegan Cheese Fries ๐ŸŸ๐Ÿง€๐ŸŒฑ
โ€ข 1 cup raw cashew nuts, soaked till softened
โ€ข 1 tsp salt
โ€ข 1 tsp smoked paprika
โ€ข 1 tsp miso paste
โ€ข 1 tbs Dijon mustard
โ€ข 2 tbs lemon juice
โ€ข 4 tbs tapioca flour โ€ข 1/2 cup nutritional yeast
โ€ข 1.5 cup unsweetened plant milk (I use oat milk)
โ€ข 2-4 portions of fries ๐Ÿ˜
Instructions:
1. Blend all the ingredients together for at least 3 minutes, make sure everything is well combined and smooth. 
2. Transfer the mixture to a nonstick saucepan on low heat- stir vigorously until the sauce thickens. The colour will intensify as you continue to simmer. If you'd like the colour to be more yellow- add a pinch of turmeric or some liquid saffron. 
3. Once you reach the preferred consistency of your cheese sauce- bathe your fries in all that glorious goodness. 
4. Indulge. Or broil for a few minutes if that's what you like. โค๏ธ
**If you'd like to substitute cashew nuts- use 1 cup of cooked potatoes (peeled) and 1/2 cup of cooked carrots (also peeled) or use walnuts if you'd like this to be more healthful. The sauce won't be as creamy, but it's a good alternative.**

As I mentioned in my chickpea cookies video,  I'm naturally a terrible baker; so, if I could pull this off- you know it's legit. ๐Ÿ˜˜
I'm super proud of what I came up with, and I hope you enjoy this video and recipe as much as I enjoyed creating them!

Vegan Coconut Scones ๐ŸŒด โ˜•๏ธ
โ€ข 2 cups plain flour
โ€ข 2 tsp baking powder
โ€ข 1/2 tsp fine sea salt
โ€ข 4 tbs coconut sugar
โ€ข 75 g coconut oil, cut into small cubes
โ€ข 1/3 cup coconut milk
โ€ข 1/4 cup coconut cream
โ€ข 120 g coconut meat, cut into strips
*make sure ALL ingredients are cold- this is very important*
๐ŸŒฑ
Instructions:
1. Preheat the oven at 425. In a large bowl, mix together flour, baking powder, coconut sugar, and salt. 
2. Add coconut oil cubes and rub them into the flour using your fingertips or a potato masher until you're left with what looks like breadcrumbs and the flour holds together when squeezed. 
3. Stir in coconut meat strips very quickly, make sure all the pieces are coated. 
4. Combine coconut milk and coconut cream before adding the mixture into the bowl. Mix just until the dough comes together. DO NOT overwork the dough- we want to keep our scones light and flakey. Transfer to the refrigerator for 20-30 minutes.
5. Drop the dough onto a floured surface and gently push it until you get the shape you want and cut into pieces. 
6. Lightly brush the dough with coconut milk and sprinkle some sugar on top (optional) before baking until lightly golden brown. 
7. Rest your scones on a cooling rack or indulge right away if you like to live dangerously like me. โค๏ธ

Hello from the future! ๐Ÿ‘ฝ not really ๐Ÿ˜œ but it is already Friday night in Thailand. So, I thought I'd share with you (again) one of my favourite noodle recipes: Vegan Da Lu Mein โค๏ธ๐Ÿ’›
Also known as Chinese Vegan Noodles topped with thick vegetable-based gravy. It is super easy to make. You can substitute ramen noodles with vermicelli or glass noodles if you'd like. Or you can leave carbs out entirely and enjoy this as a hearty bowl of soup- make it your own! I know this is not the most healthful dish (obviously) but it is too yummo to pass up!

Ingredients:
โ€ข 1 tbs coconut oil
โ€ข 5 g garlic, chopped
โ€ข 100 g onion
โ€ข 50 g baby corn
โ€ข 50 g ear wood mushroom โ€ข 50 g king oyster mushroom โ€ข 40 g leek (only the green part)
โ€ข 50 g carrot
โ€ข 1 cup vegetable stock
โ€ข 150 g bamboo shoots
โ€ข 4 cups water
โ€ข 80 g ramen noodles
โ€ข 3 tbs light soy sauce
โ€ข 1 tsp brown sugar
โ€ข 2 tbs potato starch + 2 tbs water = potato starch slurry ๐ŸŒฑ 
Instructions:
1. In a pot, add coconut oil, sautรฉ onion, followed by baby corn, ear wood mushroom, king oyster mushroom, leek, and carrot. Continue to stir fry for a few minutes until the vegetables are cooked through and are nicely seared. 
2. Add vegetable stock, stir, and add bamboo shoots. 
3. Pour in water and bring to a boil. Simmer for 5-7 minutes. 
4. Add dry ramen noodles and continue to cook until the noodles become soft. 
5. Add light soy sauce, brown sugar. Stir until well combined, before pouring in potato starch slurry. 
6. Stir quickly and continue to cook until the broth becomes clear and thickens. Serve hot.

I posted this recipe before for Earth Day, but considering a lot of you would probably be making burgers later on to celebrate this occasion, I thought I'd share this video again. ๐Ÿ’™โค๏ธ
The preparations are easy and not time consuming. Most importantly- the burgers are not soggy nor crumbly dry like you'd expect most veggie burgers to be. Every bite is packed with vitamins and is bursting with flavours. Hungry for some nice buns? ๐Ÿ˜‰๐Ÿ˜‚ If so, then let's get to it!
๐ŸŒฑ
๐Ÿค—
Ingredients:
โ€ข 1 cup cooked red quinoa, ground (using a food processor)
โ€ข 1 cup raw beetroot, peeled and grated โ€ข 1/2 can lentils, rinsed and mashed (no need to drain completely)
โ€ข 100 g shiitake mushroom, chopped
โ€ข 1/4 cup breadcrumbs
โ€ข avocado oil for stir frying - pan frying
(Spices)
โ€ข 1 tsp black salt/ onion powder/ ground sage/ smoked paprika/ cayenne pepper/ ground pepper
โ€ข 1/8 tsp garlic powder
โ€ข 1 tbs whole grain mustard
โ€ข 1/4 cup unsalted vegetable broth
โ€ข fresh rosemary (optional) ๐ŸŒฑ
Instructions:
1. In a pan, sautรฉ shiitake mushroom and beetroot in avocado oil, followed by salt, spices, and fresh rosemary. Continue to stir fry until fragrant and add vegetable broth. 
2. In a large bowl, add ground quinoa, breadcrumbs, mashed lentils, sautรฉed shiitake and beetroot, whole grain mustard, and nutritional yeast. Mix well. 
3. Knead for a few minutes or until well combined. Form burger patties (4 large ones or 6 regular sized ones)
4. Pan fry burgers in avocado oil or grill until nicely seared. 
5. Assemble a burger with homemade vegan bacon* (video is on my feed ๐Ÿฅ“)

Did you know there's an awesome vegan sushi place in Bangkok? ๐Ÿ˜ฎ๐Ÿคค๐Ÿ’š๐Ÿ˜ ***I am sorry for having to state the obvious, but it seems that a lot of people cannot tell that this is all vegan- the "sashimi" you see (salmon and tuna) are all made from konjac. No animals were harmed in the making. And no, not even fish since vegans don't eat fish. Just so we're absolutely crystal clear. ๐Ÿ˜‚***

This place is located quite far away from the city centre, but we managed to find it nonetheless. And it was worth it! We had lunch here weeks ago, but I didn't get around to make a video to show you all until now. ๐Ÿฃ 
Everything on the menu is vegan. Their vegan sashimi/ sushi were all delicious! I've never had anything like that, and I was on cloud 9 the whole time I was there. The restaurant is just called Gin Je/ Jey food, Japanese style: straight forward- to the point. There is no specific name to this restaurant, in case you're wondering. Click the location if you're wondering where it's located. Don't think I'll be much help- I'm useless when it comes to directions. ๐Ÿ˜‚๐Ÿ˜‚๐Ÿ˜‚ We ordered vegan sushi boat, veggie tempura, vegan unagi don (eel), among other things โ˜บ๏ธ๐Ÿ˜‹ and we ate so much we had to roll out of there! This recipe offers you healthful baked cauliflower wings; so, if you're looking for something savoury to snack on without feeling guilty- this one is for you. ๐Ÿ˜„
Cauliflower (Hot) Wings
๐Ÿ˜
Ingredients:
โ€ข 400 g cauliflower florets (about 470-500 g of cauliflower head)
โ€ข 1 cup plain/ white whole wheat flour
โ€ข 1/4 tsp ground cumin
โ€ข 1/2 tsp garlic powder
โ€ข 1/2 tsp onion powder
โ€ข 1 tsp smoked paprika
โ€ข 300 ml sparkling water, refrigerated
โ€ข 2 tbs coconut oil for greasing the baking tray
โ€ข 1/2 hot sauce โ€ข 1-2 tbs vegan butter, melted
โ€ข 1 tsp white wine vinegar 
Instructions:
1. Bake cauliflower florets in the oven at 400 for about 30-40 minutes, flip half way through. This is to get rid of the moisture so the batter won't become wet and soggy later on.
2. Combine flour with garlic powder, onion powder, cumin, and smoked paprika. Then, add sparking water and mix well.
3. Once the cauliflower florets are baked, transfer to a bowl before greasing up the baking tray and popping it back into the oven. 
4. Once the tray is hot, coat the florets in your batter and transfer them onto the hot, sizzling pan. 
5. Continue to cook at the same temperature for another 20 or so minutes- until the batter crisps up, and that's when you know they're done. (Or just deep fry them if you're hangry)
6. Whisk together hot sauce, vegan butter, and vinegar before pouring the sauce over your baked cauliflower wings and toss until fully coated. 
7. Broil the "wings" for about 5-10 minutes or until the sauce is caramelized and glossy. 
8. Serve with a side of tofu ranch and fresh vegetables.
